For my fun time activity I like race bicycles on the weekend. This means that most of my weekends are taken up by traveling to races. So it's a lovely treat when I get to lounge around in my pajamas and enjoy some delicious pancakes.
I found the perfect recipe for Blueberry Banana Pancakes on the blog Love and Lemon.It was perfect because I had a banana hanging out that was desperately crying out to be used and I had just purchased the last round of summer blueberries at the market.
Sounds delicious and really this couldn't get any better for a pajama lounging Sunday except I know...add Peaches. Yay Peaches! One of my favorite combinations is peaches and blueberries.
I created a basic peach sauce to drizzle over the blueberry banana pancakes. It was a simple peel and slice some peaches, throw in some sugar, throw in some cornstarch a dash of lemon juice and let it simmer until you have a peach sauce.
Once you're ready to serve stack the pancakes, pour on the peaches, add a few more blueberries and sprinkle on some almond slices.
As my boyfriend and I sat in our pajamas eating the delicious morning treat he stated how fancy this breakfast looked and that maybe we should put on our fancy pants.
I guess if you serve this to guest make sure to put on your fancy pajama bottoms and keep your pinkies up!

Not Nachos...Potachos
It might not be officially fall but it is starting to feel like it's here. Glowing orange pumpkins, varieties of squashes and cooler temperatures all remind me Fall is approaching. However, to me the biggest kick in the tush that Fall is here is FOOTBALL! Where I live it's everywhere. Kids practicing after school, the bright lights illuminating the sky from the local stadium and every television channel I click on there it is.
With all this football it's no wonder I started craving football food. And one of my favorites is Nachos! Mmmm. It's kind of like a tailgater salad...right? Lettuce, beans, tomato, avocado, onions and cheese, all the things that make up a yummy salad. See you didn't realize how healthy they could be.
We didn't have any tortilla chips in the house but thankfully I remembered reading a recipe from Oh She Glows where she used potatoes instead of tortilla chips. Hurray! Since I was using potatoes instead of tortilla chips I thought it was only appropriate they be called POTACHOS! Plus it's fun to say...try it...POTACHOS!
With the combination of the Oh She Glows Black Bean and Potato Nacho Plate and some Veganomicon Cheese Sauce, potachos are a touchdown for any fan.

Keeping it Simple Hummus
Surprise, surprise the first recipe on the Doubting Hummus is...drum roll...HUMMUS! The shock has probably taken over you so I'll give you a moment.
I'm trying to stick to the rule of keeping things simple on this new vegan adventure. Not much could be easier than hummus. Delicious as a snack with veggies, better than mayo on sandwiches and should I be attacked by vampires a dab behind the ears will do wonders.
There are a handful of recipes out there for hummus. The recipe that I really enjoy is from Smitten Kitchen. It's simple, garlicky, creamy and oh so hummusie. Check out the recipe at Smitten Kitchen. It makes a great base so when you feel like living on the wild side you can add some roasted peppers or switch up the raw garlic for roasted garlic.
Grab some veggies and dig in!

The Doubting Hummus.
Day 1 of VeganMoFo has officially begun and I already have become the doubting hummus.
I doubt that I can do this because it's going to be too hard
I doubt I can do this, it's too expensive
I doubt I can do this, my family and friends won't support my decision
I doubt I can do this, I don't have the time with my schedule
I doubt....I doubt....I doubt....I doubt....
It's so weird. I had signed up to be a part of VeganMoFo with no doubts. This was something that I wanted to be a part of and leading a vegan lifestyle was something that I had no doubts about was going to be a huge benefit for my health. VeganMoFo is the start of trying a vegan lifestyle.
I had expressed my interest in participating in VeganMoFo and my boyfriend encouraged me to give it a go. He even walked me through setting up this blog with me. I don't doubt I have the support of friends and family.
To prepare for VeganMoFo I knew I needed to get my cupboards and refrigerator in order and look at some basic recipes to get me started. Start with basics - that's usually the best place. Here are some blogs that were helpful and had some great recipes that seemed easy to get started. They helped eliminate the doubt that this was going to be hard.

Armed with my pantry list of items off to the store I went. Talk about a mind melt. This was the most eye opening trip to the store I have ever had. It was no longer a matter of grabbing whatever I wanted off the shelf there was actually going to be some quality time between me and the labels.In the words of Inspector Gadget WOWSERS! After checking out at the store my doubt of this won't fit into my budget was gone. Who knew beans could be so cost effective...that deserves one more...wowsers.
As I go through the days of VeganMoFo there will be days that I will be the doubting hummus wondering whether or not I can make this change. But I know with the support of friends and family, great recipes and tools shared by others, taking baby steps into the vegan lifestyle the doubt will only be...does the hummus have enough garlic.
